Chilli are technically, berries. When used fresh, they are most often prepared and eaten like a vegetable. Chilie can be dried and then crushed or ground into chilli powder that is used as a spice or seasoning. Chillie can be dried to prolong their shelf life. Sambal is the name for chilli paste in Indonesian, Malaysian and Singaporean cuisine. Chilli are sometimes used whole or in large, slices by roasting, or other means of blistering or charring the flesh beneath. When cooled, the skins will usually slip off easily.
Taste
Once ripe, chillie have a sweet taste, but their lure stems from their heat, which comes from capsaicin, an odourless, tasteless, irritant alkaloid. Capsaicin works by exciting the palate, which in turn heightens our sense of taste, flavour and texture.
